WoT, I've been thinking along the same line. It'd be great to have the coat of arms repeated on the horse's head cover. The problem is there are too many ups and down on the horse head piece (let's say it's a hood, for short) to apply a transfer neatly. This could be done with water-slide stickers but only upon white surfaces or yellow surfaces with no white in the design.
Otherwise, very small transfers could be placed on the sides of the neck where the hood is relatively flat. But I'm afraid shrinking the designs turn the details of the design to blur.
A complete chaimail would be impossible, IMO, I think it should be sculpted...
