Most modern themes would work with medieval too.
-Farms.
More interesting really, no machinery. Just farmers and their helpers, and lots of animals.
-Dollhouse.
A huge keep that can be attached to castle walls. Comes with seperate rooms to put in it like a dining room, bedroom, armory, strategy room, etc.
-Wildlife.
Hunters, merry men, rope bridges, waterfalls, tree houses and animals would all be here.
-Law enforcement.
There would be a prison, guard tower, prison wagon with horses, set with guards and a captain, maybe a tax collector wagon with guards and a robber.
-horses.
Would come with stables, horses, children, a courier, wagons and all the usual stuff.
-Carnival.
Gypsies, street performers, fortune tellers, fire eaters, jugglers, a threatre stage and all that could be here.
-City life.
Could include a tavern, various shops too.
-House.
Would be a medieval city manor fit for the wealthy middle class. It could have seperate stables that can be attached to it, various common rooms, an outhouse, maybe a basement through some trickery with stairs and putting it on some nice stonework walls underneath the house.
-Harbour.
Medieval ships would be nice to see, could be merchants, a harbour with light house, a ware house, some thieves and even pirates.
